Adapted into Japanese from the Portuguese word "alambique." In the early 17th century a man named Okamura Zuiseki from Osaka, learned the technique of steam distillation (alambique) from the Dutch to manufacture clove oil, a technique which he passed on to his descendants. In the Edo period the method was adapted to the production of shochu, a distilled spirit, and the extraction of flower oil.
